In order to be objective, let us immediately clear up any clichés or facile exploitation of facts: we have no desire to denigrate the Chinese for eating animals that we in the West never eat. This is part of their local customs and must be respected, just as local customs in other countries must be respected. Crocodile tripe, lizard sauce or zebu casserole are enjoyed in Ethiopia. In Madagascar parrots and squirrels end up roasted, in the Congo they prefer boa snakes. Wingless termites roasted in banana leaves or live black ants are considered a delicacy in Cameroon, as caimans are in New Guinea. We have no intention to question nor to share these practices. We will simply speak about the pointless violence to which animals are subjected.
